Description
Florence Fennel (Foeniculum vulgare var. azoricum) is a versatile and attractive edible herb known for its feathery, aromatic foliage and bulbous base. This evergreen herb grows to a height of 60 - 90 cm and spreads 30 - 60 cm, making it an excellent choice for garden beds or pots in full sun. Its delicate, fern-like leaves are a vibrant green, adding ornamental appeal to herb gardens. Florence Fennel thrives in well-draining, fertile soil with regular watering, particularly during the warmer months. Its adaptability and light, fresh scent make it a favourite in Mediterranean-inspired gardens.
This plant is highly valued as a culinary herb and vegetable. The swollen bulb is harvested and used fresh in salads, roasted for a sweet, aniseed-like flavour, or sautéed as a side dish. The feathery fronds can be used as a garnish or in cooking for a mild fennel flavour, and the seeds can be collected for seasoning or tea. To harvest, cut the bulb at the base when it reaches a good size, leaving the roots to encourage new shoots. Regular feeding with a balanced liquid fertiliser will promote lush growth and flavourful bulbs.
