Harvesting of Brussel Sprouts is best done when the buds are firm, green, and about the size of a large marble, typically in Makuru (winter) to Djilba (late winter to early spring). Simply twist them off the stem or use a sharp knife to cut. Store the sprouts in the refrigerator in an unsealed bag for up to a week.
